Every day Real Simple sends me a tried and true recipe.  Since they’ve been road tested and are usually quite easy AND tasty, I’m always excited to get the next one.  Here’s yet another Real Simple recipe that fits the bill.

Serves 4

  • 1/4 c. rice vinegar
  • 2 t. sugar
  • kosher salt, to taste
  • 2 Kirby cucumbers, thinly sliced (now, I have NO clue what a Kirby cuke is, but any old cucumber you can find will work)
  • 1 red or green jalapeno, thinly sliced
  • 1 T. olive oil
  • 1 lb. ground pork – we’ve also tried this recipe with ground turkey and are equally as pleased
  • 1/4 c. hoisin sauce
  • 1 T. grated fresh ginger
  • 4 pitas, halved
  • OPTIONAL – sriracha sauce

In a medium bowl, combine the vinegar, sugar, and 1/4 t. salt, stirring until the sugar dissolves.  Add the cucumbers and jalapeno and let sit for at least 5 minutes, tossing occasionally.

Meanwhile, heat the oil in a large skillet over medium-high heat.  Cook the pork, breaking up with a spoon until its no longer pink, 5 to 6 minutes.  Stir in the hoisin, ginger, and 2 T water.  **My BF and I tend to like a little heat for this dish and have added a teaspoon or two of sriracha sauce to kick this up.  **

Fill the pita halves with the pork and cucumber salad.

I usually have some cucumber salad left over after this dish and its even good by itself as a side salad with lunch.
