• 1 1/2 lbs. ground beef
  • 1 lb. fresh cauliflower, cut into bite-sized florets
  • 1 c. cheddar cheese
  • 1/2 t. garlic salt
  • salt & pepper, to taste

This is a quick and easy Paleo dinner.  Kind of like hamburger helper without the pasta.   While the below recipe is very very basic, I would recommend adding sauteing some onions with the beef, maybe a few finely, chopped carrots or some stewed tomatoes to fill it out a bit.  Be creative with this base!

Steam cauliflower until soft but not mushy.

In a separate pan, brown the ground beef and then drain off the grease.

Add cauliflower, seasonings and cheese.

Mix until the cheese is melted.
