One other pitfall of any cooking endeavor is the missing ingredient.  Nothing is more frustrating than being in the middle of trying out a new recipe, only to figure out you’re missing the KEY item that would, of course, make the dish.  Below are common substitutions I found on allrecipes.com that will, hopefully, save you.

  • 1 t allspice – use 1/2 t cinnamon, 1/4 t giner, and 1/4 t cloves
  • 1 t arrowroot starch – 1 T flour, OR 1 T cornstarch
  • 1 c baking mix – 1 c pancake mix or 1 c easy biscuit mixture
  • 1 c beer – 1 c nonalcoholic beer, OR 1 c chicken broth
  • 1/4 c brandy – 1 t imitation brandy extract plus enough water to make 1/4 c
  • 1 c bread crumbs – 1 c cracker crumbs, OR 1 c matzo meal, OR 1 c ground oats
  • 1 c broth (beef or chicken) – 1 bouillon cube plus 1 c boiling water, OR 1 T soy sauce plus enough OR 1 c vegetable broth
  • 1 c brown sugar (packed) – 1 c white sugar plus 1/4 c molasses and decrease the liquid in recipe by 1/4 c, OR 1 c white sugar, OR 1 1/4 confectioners’ sugar
  • 1 c butter (salted) – 1 c margarine, OR 1 c shortening plus 1/2 t salt, OR 7/8 c vegetable oil plus 1/2 t salt, OR 7/8 c lard plus 1/2 t salt
  • 1 c butter (unsalted) – 1 c shortening OR 7/8 c vegetable, OR 7/8 c lard
  • 1 c buttermilk – 1 c yogurt, OR 1 T lemon juice or vinegar plus enough milk to make one cup
  • 1 c shredded Cheddar Cheese – 1 c  shredded Colby cheddar, OR 1 c shredded Monterey Jack cheese
  • 1 T chopped fresh chervil – 1 T chopped fresh parsley
  • 1 T chicken base – 1 c canned or homemade chicken broth or stock.  Reduce liquid in recipe by 1 cup.
  • 1 oz chocolate (semisweet) – 1 oz square of unsweetened chocolate plus 4 t sugar, OR 1 oz semisweet chocolate chips plus 1 t shortening
  • 1 oz chocolate (unsweetened) – 3 T unsweetened cocoa plus 1 T shortening or vegetable oil
  • 1/4 c cocoa – 1 oz square unsweetened chocolate
  • 1 (10.75oz) can condensed cream of mushroom soup – 1 (10.75 oz) can condensed cream of celery,  cream of chicken, or golden mushroom soup
  • 1 c corn syrup – 1 1/4 c white sugar plus 1/3 c water, OR 1 c honey
  • 1 c cottage cheese – 1 c farmer’s cheese, OR 1 c ricotta cheese
  • 1 c cracker crumbs – 1 c bread crumbs, OR 1 c matzo meal, OR 1 c ground oats
  • 1 c cream (half & half ) – 7/8 c milk plus 1 T butter
  • 1 c cream (heavy) – 1 c evaporated milk, OR 3/4 c milk plus 1/3 c butter
  • 1 c cream (light) – 1 c evaporated milk, OR 3/4 c  milk plus 3 T butter
  • 1 c cream (whipped) – 1 c frozen whipped topping, thawed
  • 1 c cream cheese – 1 c pureed cottage cheese, OR 1 c plain yogurt, strained overnight in a cheesecloth
  • 1 t cream of tartat – 2 T lemon juice or vinegar
  • 1 c creme fraiche – combine 1 c heavy cream and 1 T plain yogurt.  Let stand for 6 hours at room temperature
  • 1 whole egg (3 T or 1.7 oz) – 2 1/2 T powdered egg substitute plus 2 1/2/ T water, OR 1/4 c liquid egg substitute, OR 1/4 c silken tofu pureed, 3 T mayonnaise, OR half a banana mashed with 1/2 t baking powder, OR 1 T powdered flax seed soaked in 3T water
  • 1 c evaporated milk – 1 c light cream
  • 8 oz farmer’s cheese – 8 oz dry cottage cheese, OR 8 oz creamed cottage cheese, drained
  • 1 c fats for baking – 1 c applesauce, OR 1 c fruit puree
  • 1 c flour (bread) – 1 c all-purpose flour plus 1 t wheat gluten (available at health food stores & some supermarkets)
  • 1 c flour (cake) – 1 c all-purpose flour minus 2 T
  • 1 c flour (self rising) – 7/8 c all-purpose flour plus 1 1/2 t baking powder and 1/2 t salt
  • 1 clove garlic – 1/8 t garlic powder, OR 1/2 t granulated garlic, OR 1/2 t garlic salt & reduce salt in recipe
  • 1 T granulated gelatin – 2 t agar agar
  • 1 t ginger (dry) – 2 t chopped fresh ginger
  • 1 t ginger (fresh) – 1/2 t ground dried ginger
  • 1/2 c green onion (chopped) – 1/2 c onion, OR 1/2 chopped leek, OR 1/2 c chopped shallots
  • 1 c whole hazelnuts – 1 c macadamia nuts, OR 1 c almonds
  • 1 T chopped fresh herbs – 1 t dried herbs (chopped or whole leaf)

  • 1 c shortening – 1 c butter, OR 1 c margarine minus 1/2 t salt from recipe
  • 1 c sour cream – 1 c plain yogurt, OR 1 T lemon juice or vinegar plus enough cream to make 1 cup, OR 3/4 c buttermilk mixed with 1/3 c butter
  • 1 c sour milk – 1 T vinegar or lemon juice mixed with enough milk to make 1 cup.  Let stand 5 minutes to thicken
  • 1/2 c soy sauce – 4 T Worcestershire sauce mixed with 1 T water
  • 1 c stock (beef or chicken) – 1 cube beef or chicken bouillon dissolved in 1 c water
  • 1 (14 oz) can sweetened condensed milk – 3/4 c white sugar mixed with 1/2 c water a d 1 1/8 c dry powdered milk.  Bring to a boil and cook, stirring frequently, until thickened, about 20 minutes
  • 1 c vegetable oil (for baking) – 1 c applesauce, OR 1 c fruit puree
  • 1 c vegetable oil (for frying) – 1 c lard, OR 1 c vegetable shortening
  • 1 t vinegar – 1 t lemon or lime juice, OR 2 t white wine
  • 1 c white sugar – 1 c brown sugar, OR 1 1/4 c confectioners’ sugar, OR 3/4 c honey, OR 3/4 c corn syrup
  • 1 c wine – 1 c chicken or beef broth, OR 1 c fruit juice mixed with 2 t vinegar, OR 1 c water
  • 1 (.25 oz) package yeast (active dry) – 1 cake compressed yeast, OR 2 1/2 t active dry yeast, OR 2 1/2 t rise yeast
